I’ve recently discovered that I love to bake. Sweets, that is. Cakes, cookies, slices .. you get my drift. What’s more, I’m good at it!

Anyone who knows me, knows this is highly unexpected. I’m not exactly a domestic goddess. I think perhaps what it is, is that I love it when people love what I make. I like to hear the ‘mmmmms’ and the ‘yuuuuuums’! This pleases me!

This recipe is as simple as they get – and the tasters rave about them. I’m a little bit slap-dash in my cooking, so approximates are what I deal in mostly. Not to the extreme – I’m just not strict. Here or there, is all the same.

Peanut butter and choc chip cookies

Ingredients
90-100g unsalted butter
2/3 (two thirds) cup brown sugar
1 egg
1 tsp vanilla essence
150g or 1/2 (half) cup peanut butter – smooth or crunchy, your choice! The measurement here is to taste, really. I use about 3 large (LARGE) heaped-to-the-max tablespoons peanut butter
225g or 1 1/2 (one and a half) cups plain flour
1 tsp baking soda
200g choc chips (or to taste!)

Method
1 Pre-heat oven to 180 degrees celcius (which is about 355 fahrenheit)
2 Cream the butter and sugar
3 Whisk egg very lightly then add to butter and sugar mixture
4 Add vanilla essence to this mixture
5 Sift flour into the mixture and then add baking soda
6 Stir it all until you have a dough-y mixture
7 Add peanut butter and choc chips to the mixture and mix it all in thoroughly
8 Spoon teaspoons of the mixture onto a greased tray – or a tray with baking paper
9 Cook in oven for 8-9 minutes on 180 celcius
10 Let cookies cool for a half hour or so before moving them. Wrap them up or put them in a container in the fridge to keep.

This makes about 40 cookies – really depending on how big you make them. The ones in the picture are large! The mixture only made about 20 of those!
